Fordhook giant also known as Swiss chard or seakale beet.
It has been grown in Australia primarily as a leaf vegetable.
The silver beet leaves are eaten like spinach, the stems can be cooked like celery.
The seedlings can also be served in salads.
Although it looks like true spinach (Spinacia oleracea), silver beet has a larger, coarser, milder tasting leaf.
It is also more tolerant of cold, heat, drought and disease.
Silverbeet can be grown right through summer without the fear of it bolting to seed and becoming bitter to taste.
